It's difficult to determine who would win in a fight between Kankuro and Hinata without more context about the cir*stances of the fight. Both Kankuro and Hinata are skilled fighters with different strengths and abilities.

If we are talking about Kid Hinata vs Kankuro from exams then most likely Kankuro would win but not as easly as you would think. Byakugan completly counters all of his long range advantage same with Puppets and what ambushes cuz of forest bruh, again Byakugan.
Honestly Kankuro wins this just because of his higher battle experience and landing some poison needles or something but it would be super hard fight for him just cuz of Byakugan counter. Yes with Byakugan Hinata should be able to see what every puppet is equipped with but lack of battle experience won't let her take advantage of it.
As for War Arc Hinata vs War Arc Kankuro she completly stomps Kankuro to the point of him being as useless vs her as he was vs Sasori. Byakugan with now way more advanced taijutsu and gentle fists abilities, 64 palms etc would obliterate Kankuro who can't hide anything and play it smart like he likes vs Byakugan. Remember as well that puppet masters are absolute garbanzo in close range that's why they always hide in their puppets and use other tricks, vs Byakugan you can't do that at all. She could rush him drop 64 palms like Neji vs Kidomaru and it would be insta GG since Kankuro has 0 defensive abilities compared to Kidomaru.
It's such counter match - up that it's not even hard to debate Kid Neji stomps War Arc Kankuro 0 difficulty.
